Ingredients

Teriyaki Sauce

  • 3 tablespoons soy sauce
  • 3 tablespoons light brown sugar
  • 2 tablespoons rice vinegar
  • ½ teaspoon garlic powder
  • ½ teaspoon ground ginger

Fried 'Rice'

  • 3 cups chilled cooked quinoa
  • 1 tablespoon neutral oil
  • 1 large carrot, peeled and diced
  • 1 medium red bell pepper, diced
  • cups frozen edamame
  • 3 sprigs green onion, sliced
  • to taste sesame seeds (optional)
  • to taste freshly ground black pepper (optional)

Instructions

  1. Make the teriyaki sauce by whisking together all ingredients in a small container and set aside.
  2. Heat a large non-stick skillet over medium-high to high heat and add the oil.
  3. Add the diced carrot, diced bell pepper, and frozen edamame to the hot oil and stir fry for 2-3 minutes.
  4. Once the vegetables are tender, add the white parts of the green onion, quinoa, and teriyaki sauce.
  5. Cook for another 2-3 minutes until the sauce is absorbed and the quinoa is golden.
  6. Turn off the heat and add the remaining green onion. Serve topped with sesame seeds and black pepper.
