Grain-free Pumpkin Pancakes

Ingredients

The batter

  • 6 eggs eggs
  • 1 cup pumpkin puree
  • ¼ cup coconut milk
  • ¼ cup honey
  • 12 drops vanilla liquid stevia
  • 1 tbsp vanilla extract
  • 2 tbsp coconut oil or ghee

The dry ingredients

  • ¼ cup buckwheat flour
  • 2 tbsp buckwheat flour
  • 1 cup almond meal flour
  • 2 tsp pumpkin pie spice
  • 1 tsp cinnamon
  • ½ tsp baking soda
  • ½ tsp baking powder

Instructions

  1. Combine the eggs, pumpkin puree, coconut milk, honey, vanilla liquid stevia, vanilla extract, and coconut oil or ghee in a blender or food processor and puree until smooth.
  2. Add the buckwheat flour, almond meal flour, pumpkin pie spice, cinnamon, baking soda, and baking powder to the mixture and puree again until well combined.
  3. Preheat a skillet and grease it with coconut oil.
  4. Pour the batter onto the skillet and spread it out using the back of a spoon.
  5. Cook until the pancakes are set, then serve with applesauce or your favorite pancake toppings.
