Instructions
- Combine the eggs, pumpkin puree, coconut milk, honey, vanilla liquid stevia, vanilla extract, and coconut oil or ghee in a blender or food processor and puree until smooth.
- Add the buckwheat flour, almond meal flour, pumpkin pie spice, cinnamon, baking soda, and baking powder to the mixture and puree again until well combined.
- Preheat a skillet and grease it with coconut oil.
- Pour the batter onto the skillet and spread it out using the back of a spoon.
- Cook until the pancakes are set, then serve with applesauce or your favorite pancake toppings.
