Ingredients

The muffins

  • cups oat flour
  • cups fine ground almond flour
  • 4 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon ground cloves
  • ½ teaspoon sea salt
  • ¾ - 1 cup mashed ripe banana
  • ¾ cup maple syrup
  • ½ cup dairy free milk
  • 8 teaspoons apple cider vinegar
  • 1 cup chopped walnuts

Optional topping

  • to taste coconut sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together the flours, baking powder, cinnamon, cloves, and salt.
  3. In a blender, combine the banana, maple syrup, milk, and apple cider vinegar, and blend until smooth.
  4. Add the dry ingredients to the blender and pulse until well mixed.
  5. Add the walnuts and pulse to chop them in.
  6. Pour the mixture into a prepared muffin tin.
  7. Bake for 24-25 minutes, or until a toothpick comes out dry with crumbs.
