Jamaican Jerk Spice Paste

Ingredients

  • ½ cup chopped onion
  • 4 pieces scallions
  • 1 tbsp allspice berries (ground is okay too)
  • 1 tbsp black pepper corns
  • 2 tsp dried thyme (fresh is even better)
  • 2 tsp cinnamon
  • 1 tsp ground sea salt
  • 1 tsp brown sugar
  • 1 dash hot sauce
  • ¼ tsp chopped habanero or scotch bonnet pepper with seeds removed
  • 1 large lime (zest and juice)
  • 3 tbsp olive oil

Instructions

  1. Add all the ingredients to a food processor in the order they are listed.
  2. Puree the ingredients, gradually adding the olive oil at the end.
  3. Continue to puree until the paste reaches a uniform consistency.
  4. Use the paste as a marinade on chicken or pork.
