Ingredients

  • 4 pieces organic scotch bonnet peppers
  • oz ½ large red onion or 1 medium yellow onion, chopped
  • 6 cloves garlic
  • 5 stalks scallion
  • ¼ cup white vinegar
  • ¼ cup soy sauce
  • teaspoons sea salt
  • 1 tablespoon ground black pepper
  • 1 tablespoon grated fresh ginger
  • 2 tablespoons fresh pimento seeds
  • 2 tablespoons brown sugar
  • 1 teaspoon freshly grated nutmeg
  • 2 tablespoons oil
  • 7 sprigs fresh thyme
  • 1 squeeze lime

Instructions

  1. Combine all ingredients in a high-speed blender.
  2. Blend until fully incorporated.
  3. Pour the sauce into a sanitized jar.
  4. Store in the fridge and enjoy immediately or let the flavors meld.
