Caribbean Pepper Sauce

Ingredients

  • 2-4 pieces Habanero or scotch bonnet peppers
  • ¼ cup chopped onion
  • ½ cup fresh fruit (Mango or Pineapple)
  • 2-3 cloves garlic
  • ¼ teaspoon cumin spice
  • ¼ cup vinegar (lime and vinegar mixture)
  • ½ teaspoon mustard
  • 1-2 tablespoons brown sugar (optional)
  • to taste salt and white pepper
  • to taste herbs (parsley, cilantro, basil, thyme optional)

Instructions

  1. Blend the scotch bonnet pepper, garlic, fruit, and onions in a food processor or blender, adding vinegar to help blend.
  2. Mix in cumin, mustard, white pepper, and brown sugar. Adjust seasoning with salt.
  3. Refrigerate the sauce until ready to use.
  4. Alternatively, sauté the scotch bonnet pepper, garlic, and onions in oil for 1-2 minutes.
  5. Let the mixture cool, then blend with the other ingredients to desired consistency.
  6. Return to the saucepan, add more oil if needed, bring to a boil, and simmer for about 15 minutes.
  7. Adjust seasoning and refrigerate until ready to use.
