Scotch Bonnet Hot Pepper Sauce

Ingredients

  • 7 cloves garlic
  • 1 cup chopped carrots
  • 11 pieces scotch bonnet peppers or habanero peppers
  • 1 large onion
  • tablespoons cane sugar
  • tablespoons sea salt
  • 1 cup white vinegar
  • 1 cup water
  • 1 large lime juice

Instructions

  1. Roast the garlic in a skillet until blackened on both sides.
  2. Remove the skins from the garlic and return the peeled cloves to the skillet.
  3. Add all other ingredients except lime juice to the skillet and stir together.
  4. Bring the mixture to a boil, then reduce to a simmer for 25 minutes, stirring occasionally.
  5. Remove from heat and pour the mixture into a blender, adding the lime juice.
  6. Blend until smooth, adjusting consistency with more lime juice if desired.
  7. Store the sauce in a sterilized jar, allowing it to sit for a day or two for the flavors to meld.
