Caribbean Hot Sauce

Ingredients

  • 1 medium ripe mango or papaya
  • ½ medium yellow onion, chopped
  • 2 cloves garlic
  • 1 inch piece ginger root, coarsely chopped
  • 5 pieces scotch bonnet or habanero peppers, de-stemmed
  • ½ tsp turmeric
  • 1 tblsp dry mustard
  • pinch cumin
  • pinch coriander
  • ½ tblsp honey
  • ½ cup water
  • ½ cup cider vinegar
  • 1 tsp sea salt

Instructions

  1. Puree the mango, onion, garlic, ginger, peppers, turmeric, mustard, cumin, coriander, and honey in a blender.
  2. Transfer the mixture to a bowl.
  3. In a non-reactive saucepan, bring the vinegar, water, and salt to a boil.
  4. Pour the boiling mixture over the mango mixture and mix well.
  5. Allow the sauce to cool before bottling.
  6. Store the sauce in the refrigerator for up to 6 weeks.
