Floribbean Mango Chutney

Ingredients

  • 5 cups chopped mango
  • 1 cup sugar
  • 1 cup packed light brown sugar
  • 1 cup apple cider vinegar
  • 1 cup golden raisins
  • ½ cup finely chopped or grated ginger
  • Juice and zest of 4 limes
  • 2 tsp Chile powder
  • 1 tsp ground nutmeg
  • 1 tsp sea salt
  • ½ tsp ground cloves
  • ½ tsp freshly ground black pepper
  • 2 cloves garlic, minced
  • 1 large yellow onion, finely chopped
  • 1 stick cinnamon

Instructions

  1. Combine all ingredients in a large pot.
  2. Bring the mixture to a boil.
  3. Reduce heat and let it simmer for about 1½ hours to reduce and thicken the sauce.
  4. Store the chutney in jars in the refrigerator for up to two weeks, or can it for longer storage.
