Mango Pineapple Chutney

Instructions
- Rinse and cut the mangoes into chunks, then set aside.
- Dice the onion and heat vegetable oil with red pepper flakes in a medium pot.
- Add the onion and cook until softened.
- Peel and grate the ginger into the pot, continuing to cook until softened.
- Add the mango chunks and canned pineapple (with juice) to the pot.
- Stir in brown sugar, vinegar, and garam masala, then bring to a simmer.
- Let the mixture simmer for one hour, stirring occasionally.
- If using raisins, add them about 45 minutes into the cooking time.
- Serve the chutney hot or cold.
