Jalapeño Mango Chutney

Instructions
- Prep the mango, shallot, and jalapeño, placing them in a small pot.
- Add the remaining ingredients (except cilantro) to the pot and cook over medium heat, stirring occasionally, until softened.
- Remove from heat and blend the mixture in a food processor until mixed but still thick.
- Serve immediately, garnished with cilantro, or store in an airtight container in the fridge.
