Jalapeño Mango Chutney

Ingredients

  • 1 unit ripe mango, peeled and sliced
  • 1 medium shallot, peeled and sliced
  • ½ cup diced red onion
  • ⅓ – ½ cup coconut sugar or raw sugar
  • ½ cup apple cider vinegar
  • 1–2 Tablespoons fresh lime juice
  • 1 unit jalapeño, chopped
  • 1 teaspoon kosher salt
  • a pinch cayenne
  • optional 2 teaspoons fresh grated ginger
  • optional ¼ teaspoon ground ginger
  • to garnish cilantro

Instructions

  1. Prep the mango, shallot, and jalapeño, placing them in a small pot.
  2. Add the remaining ingredients (except cilantro) to the pot and cook over medium heat, stirring occasionally, until softened.
  3. Remove from heat and blend the mixture in a food processor until mixed but still thick.
  4. Serve immediately, garnished with cilantro, or store in an airtight container in the fridge.
