1-Pot Spicy Mango Chutney

Ingredients

  • 1 Tbsp coconut oil
  • ½ cup finely chopped red onion
  • 1-2 small serrano peppers
  • ¾ cup finely chopped red bell pepper
  • 2 Tbsp fresh minced ginger
  • ¼ tsp red pepper flakes
  • 1 Tbsp curry powder
  • 3 cups chopped ripe mango
  • ½ cup mango or orange juice
  • 1 Tbsp apple cider vinegar
  • 3-4 Tbsp coconut sugar
  • 1 pinch sea salt
  • ¼ tsp garam masala

Instructions

  1. Heat coconut oil in a saucepan over medium heat.
  2. Add red onion, serrano peppers, red bell pepper, ginger, red pepper flakes, and curry powder, and cook for 3 minutes.
  3. Add the remaining ingredients, cover, and cook on low for 20-30 minutes until the mango is soft.
  4. Serve warm or let cool before using.
