Ingredients

The shrimp

  • 1 pound medium shrimp

The vegetables and spices

  • 1 unit scotch bonnet pepper (habanero), diced
  • ½ medium onion, sliced
  • 2 ounces unsalted butter (or canola oil)
  • 2 teaspoons minced garlic
  • 1 teaspoon fresh thyme
  • 1 teaspoon paprika
  • ½ teaspoon white pepper
  • ½ unit lemon juice (or more to taste, optional)
  • ½ cup chicken stock (or water)
  • 2 tablespoons chopped parsley
  • 1 teaspoon salt (adjust to taste)

Instructions

  1. Heat butter in a skillet over medium heat.
  2. Add garlic, onions, paprika, scotch bonnet pepper, and thyme, and sauté until fragrant.
  3. Toss in the shrimp and salt, stirring for another 2 minutes.
  4. Add chicken stock, bring to a boil, then simmer for 3-5 minutes.
  5. Add lemon juice and serve warm with bread.
