Jamaican Coconut Shrimp Stew

Instructions
- 1. Season the shrimp with jerk seasoning in a bowl.
- 2. Heat a large skillet on medium-low, add butter or oil and chopped vegetables, and cook until soft for 3 to 4 minutes.
- 3. Add the shrimp, increase heat to medium, and cook for 3 minutes.
- 4. Add the coconut milk, cover, and simmer until the shrimp are cooked through, about 3 minutes.
- 5. Garnish with cilantro or scallions and serve.
