Jamaican Cabbage and Shrimp

Ingredients

  • 1 pound Large Shrimp, peeled and deveined
  • 2-3 slices bacon, cut into 3-4 pieces
  • 2 tablespoons cooking oil
  • 1 whole scotch bonnet pepper
  • 1 teaspoon paprika
  • 1-2 teaspoons fresh thyme
  • 2 stalks green onions, sliced
  • 2 teaspoons minced garlic
  • ½ medium onion, chopped
  • ½ medium bell pepper, chopped
  • ½ teaspoon allspice
  • 1 small head cabbage, chopped (about 5 to 6 cups)
  • 1 teaspoon chicken bouillon (optional)
  • to taste salt and white pepper

Instructions

  1. Chop the cabbage and set it aside.
  2. Heat a large skillet with 1-2 tablespoons of oil.
  3. Add the shrimp and season lightly with salt and your favorite seasonings, sauté for 3-5 minutes, then set aside.
  4. In the same skillet, sauté the bacon until brown and crisp, about 3-5 minutes, then set aside.
  5. Leave 1-2 tablespoons of bacon drippings in the pan, add more oil if needed.
  6. Add thyme, onions, green onions, garlic, scotch bonnet pepper, paprika, bell pepper, and allspice, and sauté for about 2 minutes.
  7. Add the chopped cabbage, chicken bouillon (if using), and white pepper, stirring to combine.
  8. Cook for about 5 minutes or until the cabbage is cooked to your liking, adjusting seasoning with salt and pepper.
  9. Serve the cabbage topped with the sautéed shrimp or on the side.
