Caribbean Corn Beef and Cabbage

Ingredients

  • 1 can Corn beef (12 ounce)
  • 3 tablespoons cooking oil
  • 1 medium onion, chopped
  • 2 teaspoons fresh thyme
  • 1 teaspoon allspice
  • 2 teaspoons minced garlic
  • 1 whole scotch bonnet pepper
  • 2 green onions, chopped
  • 1-2 whole tomatoes, chopped
  • ½ medium bell pepper, chopped
  • 1 teaspoon paprika
  • 1 small head cabbage, chopped (about 5 to 6 cups)
  • to taste salt and white pepper

Instructions

  1. Slice or chop the cabbage and set aside.
  2. Heat a large skillet over medium heat and add about 3 tablespoons of oil.
  3. Add the onions, garlic, thyme, allspice, and scotch bonnet pepper to the skillet and sauté for 2-3 minutes until fragrant.
  4. Toss in the green onions, tomatoes, bell pepper, paprika, and white pepper, cooking for an additional 2-3 minutes.
  5. Add the cabbage to the skillet and stir to incorporate all ingredients, cooking for about 5-7 minutes while adding a small amount of water as needed.
  6. Adjust seasoning with salt and pepper.
  7. Add chunks of corned beef to the cabbage, cover, and cook until the cabbage reaches your desired doneness.
  8. Serve with rice, dumplings, and/or boiled bananas.
