BBQ Beef and Cabbage

Ingredients

  • 1 Tbsp olive oil
  • ½ lb. lean ground beef
  • 1 small onion
  • 1 tsp smoked paprika
  • ¼ tsp garlic powder
  • ¾ tsp salt
  • 4-6 cups shredded cabbage
  • 8 oz. tomato sauce
  • 2 Tbsp apple cider vinegar
  • 2 Tbsp brown sugar
  • 1 Tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 2 oz. shredded cheddar
  • 1 green onion sliced

Instructions

  1. Heat olive oil in a large skillet and brown the ground beef, breaking it apart as it cooks.
  2. While the beef is cooking, dice the onion and add it along with smoked paprika, garlic powder, and salt to the skillet.
  3. Finely shred the cabbage while the onion softens.
  4. Once the onions are soft, add ¼ cup of water to the skillet and stir to deglaze the pan.
  5. Add the shredded cabbage to the skillet, stir to combine, and cover to simmer for about 5 minutes until wilted.
  6. Stir in the tomato sauce, vinegar, brown sugar, Worcestershire sauce, and Dijon mustard, and let it simmer for a few more minutes until slightly reduced.
  7. Taste and adjust salt if necessary, then top with shredded cheddar and cover until melted.
  8. Garnish with sliced green onions before serving.
