Ingredients

The base

  • 2 cups Frozen Breakfast Potatoes with Peppers and Onions
  • 6 slices Bacon
  • 6 large Eggs

The pico de gallo

  • 2 small Roma Tomatoes
  • ½ small Onion
  • 1 small Jalapeno
  • to taste Salt
  • Juice of one lime

Instructions

  1. Mix chopped tomato, jalapeno, onion, lime juice, and salt; set aside.
  2. Cook breakfast potatoes according to package instructions, seasoning with salt and pepper.
  3. Fry the bacon and drain on paper towels.
  4. Whip the eggs, adding salt and pepper, then scramble in a non-stick skillet over medium heat until fluffy.
  5. Assemble the bowl with potatoes, bacon, scrambled eggs, and top with pico de gallo.
