Ingredients

The salad

  • cup quinoa
  • 1 ½ cups black beans
  • 1 ½ cups chickpeas (garbanzo beans)

The broth

  • 1 ⅓ cups vegetable broth

The flavorings

  • 1 tablespoon sunflower oil
  • 2 cloves garlic
  • 1 unit onion, diced
  • 1 teaspoon cumin
  • ½ teaspoon salt

Instructions

  1. Heat oil in a pot over medium heat, then add minced garlic and chopped onion, stirring until soft.
  2. Rinse the quinoa and add it to the pot with vegetable broth, cumin, salt, pepper, and garlic powder.
  3. Bring to a soft boil, then reduce heat and let it simmer for 20-25 minutes until the quinoa is cooked and water is absorbed.
  4. Stir in black beans and chickpeas until heated through.
  5. Serve hot or cold, optionally topped with avocado.
