Instructions
- Heat oil in a pot over medium heat, then add minced garlic and chopped onion, stirring until soft.
- Rinse the quinoa and add it to the pot with vegetable broth, cumin, salt, pepper, and garlic powder.
- Bring to a soft boil, then reduce heat and let it simmer for 20-25 minutes until the quinoa is cooked and water is absorbed.
- Stir in black beans and chickpeas until heated through.
- Serve hot or cold, optionally topped with avocado.
