Asparagus and Feta Crustless Quiche

Ingredients

  • 6 large eggs
  • 8 pieces thin asparagus spears
  • 4 pieces green onions
  • 2/3 cup milk
  • 1/4 cup half and half
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/3 cup feta cheese
  • 2 tablespoons chives

Instructions

  1. Preheat the oven to 350°F and coat a 9-inch pie dish with nonstick spray.
  2. Trim the asparagus and chop the green onions.
  3. In a large bowl, whisk together the eggs, milk, half and half, oregano, salt, and pepper.
  4. Arrange the asparagus and green onions in the bottom of the pie dish, then pour the egg mixture over them.
  5. Top with feta cheese and chives.
  6. Bake for 35 minutes or until the egg is set and the edges are golden.
