Instructions
- Preheat the oven to 375°F.
- Line a 9-inch pie plate with pie dough and freeze it while preparing the filling.
- In a skillet, heat olive oil and cook asparagus and spinach until tender.
- Transfer spinach to a colander and press to remove excess liquid.
- In a bowl, whisk together eggs and milk, then stir in feta and mozzarella.
- Remove the pie crust from the freezer and layer asparagus, spinach, and green onions in it.
- Pour the egg and cheese mixture over the vegetables.
- Bake for 45 minutes until set and golden brown, then let it stand for 15 minutes before serving.
