Ingredients

The filling

  • 8 spears asparagus
  • 4 cups fresh baby spinach
  • 4 large eggs
  • 1 cup milk
  • ¾ cup crumbled feta cheese
  • ¼ cup shredded mozzarella cheese
  • 4 pieces green onions
  • to taste salt and pepper

The crust

  • 1 9-inch pie crust

The oil

  • ½ tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F.
  2. Line a 9-inch pie plate with pie dough and freeze it while preparing the filling.
  3. In a skillet, heat olive oil and cook asparagus and spinach until tender.
  4. Transfer spinach to a colander and press to remove excess liquid.
  5. In a bowl, whisk together eggs and milk, then stir in feta and mozzarella.
  6. Remove the pie crust from the freezer and layer asparagus, spinach, and green onions in it.
  7. Pour the egg and cheese mixture over the vegetables.
  8. Bake for 45 minutes until set and golden brown, then let it stand for 15 minutes before serving.
