California Tom Yum Soup

roma tomatoes (cut in 1/6ths), or 20 cherry tomatoes (halved), or mix

dried guajillo chile peppers, coarsely chopped

palm, muscovado or brown sugar

Tom Yum Paste

mixed mushrooms (nameko, oyster, etc)

shoyu or soy sauce

fresh lime juice

chopped cilantro (for serving)
Instructions
- Boil the water in a medium saucepan and add the raw tomato, guajillo chile, and sugar.
- Simmer for a few minutes until the tomato softens, then add the Tom Yum Paste.
- Allow to simmer for a minute or two before adding the mushrooms and simmer until tender.
- Add a splash of shoyu or soy sauce and half of the lime juice, then taste and adjust as needed.
- Place chopped cilantro in each bowl and top with the soup.
