California Tom Yum Soup

Ingredients

  • 8 cups water
  • 2 large roma tomatoes (cut in 1/6ths), or 20 cherry tomatoes (halved), or mix
  • 2 pieces dried guajillo chile peppers, coarsely chopped
  • 1 ½ tablespoons palm, muscovado or brown sugar
  • 1 quantity Tom Yum Paste
  • 8 - 12 ounces mixed mushrooms (nameko, oyster, etc)
  • to taste splash shoyu or soy sauce
  • cup fresh lime juice
  • ¼ cup chopped cilantro (for serving)

Instructions

  1. Boil the water in a medium saucepan and add the raw tomato, guajillo chile, and sugar.
  2. Simmer for a few minutes until the tomato softens, then add the Tom Yum Paste.
  3. Allow to simmer for a minute or two before adding the mushrooms and simmer until tender.
  4. Add a splash of shoyu or soy sauce and half of the lime juice, then taste and adjust as needed.
  5. Place chopped cilantro in each bowl and top with the soup.
