Ingredients

  • cups fresh broccoli
  • 2-3 packages Shirataki Fettuccini noodles
  • ¼ teaspoon salt
  • 1 tablespoon olive oil
  • 2 breasts chicken
  • 2 tablespoons butter
  • 1 tablespoon minced garlic
  • ½ cup heavy cream
  • 4 oz cream cheese
  • ½ cup Parmesan reggiano cheese
  • 2 cups fresh spinach

Instructions

  1. Prepare broccoli by boiling it in water for 5-6 minutes until tender.
  2. Rinse Shirataki noodles thoroughly and cook in boiling salted water for 2-3 minutes.
  3. Dry the noodles with paper towels and set aside.
  4. In a skillet, heat olive oil and cook chicken cubes until no longer pink.
  5. Remove chicken and set aside, then add butter and garlic to the skillet.
  6. Add cream cheese, Parmesan, and heavy cream, stirring until melted.
  7. Combine chicken, broccoli, spinach, and noodles in the skillet and stir until spinach wilts.
