Ingredients

  • 2 pieces boneless skinless chicken breasts (6 oz each)
  • 2 tablespoons butter (divided use)
  • 1 cup broccoli
  • 2 tablespoons water
  • 1 teaspoon minced garlic
  • cup heavy cream
  • 2 ounces grated Parmesan cheese
  • 1 cup cauliflower rice
  • to taste salt
  • to taste pepper
  • for garnish chopped parsley

Instructions

  1. Let the chicken come to room temperature and season with salt and pepper.
  2. Mince the garlic and chop the broccoli into florets.
  3. Heat butter in a frying pan and cook the chicken until firm and juices run clear, then remove and tent with foil.
  4. Add broccoli and water to the pan, cover, and steam until crisp-tender, then remove and tent with foil.
  5. Sauté garlic in remaining butter, then add heavy cream and Parmesan cheese, stirring until melted.
  6. Heat cauliflower rice in another pan, seasoning with salt and pepper.
  7. Serve chicken and broccoli over cauliflower rice and pour the sauce on top.
