Ingredients

  • 2 pieces boneless skinless chicken breasts (6 oz each)
  • 2 tablespoons butter (divided use)
  • 1 cup broccoli
  • 2 tablespoons water
  • 1 teaspoon minced garlic
  • cup heavy cream
  • 2 oz grated Parmesan cheese
  • 1 cup cauliflower rice
  • to taste salt and pepper
  • for garnish chopped parsley

Instructions

  1. Let the chicken come to room temperature and season it with salt and pepper.
  2. Mince the garlic and chop the broccoli into florets.
  3. In a frying pan, melt butter and cook the chicken until firm and juices run clear, then remove and tent with foil.
  4. Add broccoli and water to the pan, cover, and steam until crisp-tender, then remove and tent with foil.
  5. In the same pan, add butter and garlic, cook until softened, then add heavy cream and Parmesan, stirring until melted.
  6. Cook cauliflower rice in another pan until heated through, seasoning with salt and pepper.
  7. Serve chicken and broccoli over cauliflower rice and pour the sauce on top.
