Meal Prep Tropical Jerk Chicken and Gingered Broccoli

Ingredients

The chicken and vegetables

  • 1/3 cup low sodium soy sauce
  • 1/3 cup pineapple juice
  • 1/3 cup honey
  • 2 tablespoons grated fresh ginger
  • 1 tablespoon jerk seasoning
  • 2 tablespoons sesame oil
  • 1 ½ pounds boneless chicken breasts
  • 2 heads broccoli, cut into florets
  • 2 cups frozen edamame
  • 4 cups coconut rice

Pineapple salsa

  • 2 cups chopped pineapple
  • 1 jalapeño, chopped
  • ¼ cup fresh cilantro, chopped
  • juices from 1 lime or lemon

Instructions

  1. Preheat the oven to 425°F.
  2. Combine soy sauce, pineapple juice, honey, ginger, garlic, and sesame oil in a bowl to make the teriyaki sauce.
  3. Toss chicken with jerk seasoning and half of the teriyaki sauce on a baking sheet. Place broccoli and edamame on the other side, tossing them with ginger, sesame oil, salt, and pepper.
  4. Roast everything in the oven for 15-20 minutes until chicken is cooked and broccoli is lightly charred.
  5. Simmer the remaining teriyaki sauce in a saucepan until it thickens slightly.
  6. Divide coconut rice among containers and top with chicken and veggies. Drizzle with teriyaki sauce.
  7. Warm each bowl before serving and top with pineapple salsa and fresh lime or lemon juice.
