Meal Prep Tropical Jerk Chicken and Gingered Broccoli

Instructions
- Preheat the oven to 425°F.
- Combine soy sauce, pineapple juice, honey, ginger, garlic, and sesame oil in a bowl to make the teriyaki sauce.
- Toss chicken with jerk seasoning and half of the teriyaki sauce on a baking sheet. Place broccoli and edamame on the other side, tossing them with ginger, sesame oil, salt, and pepper.
- Roast everything in the oven for 15-20 minutes until chicken is cooked and broccoli is lightly charred.
- Simmer the remaining teriyaki sauce in a saucepan until it thickens slightly.
- Divide coconut rice among containers and top with chicken and veggies. Drizzle with teriyaki sauce.
- Warm each bowl before serving and top with pineapple salsa and fresh lime or lemon juice.
