Ingredients

The burrito

  • 1 Avocado
  • 1 Cucumber
  • 12 oz. Smoked Salmon
  • 3 Seaweed wraps
  • 1 cup Sushi Rice
  • ¼ cup Rice Vinegar
  • 2 tbsp Sugar
  • ½ tsp Himalayan Salt

Spicy Mayo

  • cup Mayo
  • 1 tsp Sriracha Sauce
  • 1 tsp Lemon Juice
  • 1 tsp Dijon Mustard
  • ½ tsp Garlic Powder
  • ½ tsp Paprika
  • ½ tsp Black Pepper
  • ½ tsp Ground Ginger
  • 2 dash Red Cayenne Pepper

Instructions

  1. Rinse the sushi rice with cold water at least 3 times and drain.
  2. Cook the rice according to package instructions and let it cool for 5 minutes.
  3. In a small bowl, mix rice vinegar, salt, and sugar, then microwave for 30 seconds.
  4. Combine the vinegar mixture with the cooked rice and fold together.
  5. Chop the cucumber and avocado into long strips and set aside.
  6. In another bowl, whisk together all the spicy mayo ingredients until smooth.
  7. Place a seaweed wrap on a sushi mat and spread rice evenly, leaving an inch at the bottom edge.
  8. Add spicy mayo, avocado, cucumber, and smoked salmon in the center of the rice.
  9. Wet the edges of the seaweed wrap and roll it tightly using the sushi mat.
  10. Cut the roll diagonally and serve immediately.
