Instructions
- Rinse the sushi rice with cold water at least 3 times and drain.
- Cook the rice according to package instructions and let it cool for 5 minutes.
- In a small bowl, mix rice vinegar, salt, and sugar, then microwave for 30 seconds.
- Combine the vinegar mixture with the cooked rice and fold together.
- Chop the cucumber and avocado into long strips and set aside.
- In another bowl, whisk together all the spicy mayo ingredients until smooth.
- Place a seaweed wrap on a sushi mat and spread rice evenly, leaving an inch at the bottom edge.
- Add spicy mayo, avocado, cucumber, and smoked salmon in the center of the rice.
- Wet the edges of the seaweed wrap and roll it tightly using the sushi mat.
- Cut the roll diagonally and serve immediately.
