Homemade Cream of Mushroom Soup

Instructions
- Heat olive oil over medium heat.
- Add leeks (or onion) and cook until starting to brown.
- Add mushrooms and cook until their liquid has evaporated.
- Add sherry and increase heat to high, cooking until most liquid evaporates.
- Sprinkle vegetables with flour and stir to coat.
- Add milk, bring to a simmer, and cook while stirring.
- Stir in Parmesan, sour cream, parsley, salt, and pepper, then remove from heat.
