Homemade Cream of Mushroom Soup

Ingredients

  • 2 tablespoons olive oil
  • 2 leeks chopped and rinsed
  • 1 ½ pounds mushrooms, sliced
  • 1 cup dry sherry
  • ¼ cup whole-wheat flour
  • 2 cups milk
  • ½ cup parmesan cheese, grated
  • ½ cup sour cream
  • cup flat-leaf parsley, chopped
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Instructions

  1. Heat olive oil over medium heat.
  2. Add leeks (or onion) and cook until starting to brown.
  3. Add mushrooms and cook until their liquid has evaporated.
  4. Add sherry and increase heat to high, cooking until most liquid evaporates.
  5. Sprinkle vegetables with flour and stir to coat.
  6. Add milk, bring to a simmer, and cook while stirring.
  7. Stir in Parmesan, sour cream, parsley, salt, and pepper, then remove from heat.
