Ingredients

The soup base

  • 1 ⅓ cup vegetable stock
  • cup milk
  • cup all-purpose flour

The flavorings

  • ½ cup finely-chopped fresh mushrooms
  • ½ tsp salt
  • ¼ tsp garlic powder
  • ¼ tsp freshly-ground black pepper
  • ¼ tsp onion powder
  • tsp celery seed (optional)
  • tsp dried thyme

Instructions

  1. Boil vegetable stock in a large saucepan.
  2. Whisk together milk and flour in a separate bowl until dissolved.
  3. Slowly add the milk mixture to the boiling stock, whisking to combine.
  4. Stir in the chopped mushrooms and other seasonings, and reduce heat to a low boil.
  5. Cook for about 3 minutes, stirring constantly until thickened.
  6. Use immediately in a recipe or store in airtight containers in the refrigerator for up to 1 week.
