Smoked Salmon and Eggs

Instructions
- Heat olive oil in a non-stick skillet over medium heat and sauté the diced red onion until tender, about 5 minutes.
- Crack the eggs into a bowl, season with salt and pepper, then pour them into the pan with the onions, stirring often to scramble.
- When the eggs are starting to set but still soft, add the smoked salmon and fresh dill, continuing to stir until the salmon becomes opaque and the eggs are fully cooked.
- Serve warm immediately, optionally garnished with extra dill.
