Ingredients

The eggs

  • 3 large eggs
  • 2 tbsp water
  • Pinch freshly cracked black pepper
  • Pinch Himalayan salt

The vegetables

  • ½ each red and orange mini sweet bell peppers
  • 1 each green onion, chopped

The fats and herbs

  • 1 tsp ghee
  • ½ tsp fresh thyme, finely chopped

The protein

  • 75 g salmon gravlax or cold smoked salmon

Instructions

  1. Melt the ghee in a non-stick skillet over medium-low heat and cook the bell peppers and green onions until softened.
  2. In a mixing bowl, whisk the eggs with water, salt, and pepper until slightly frothy.
  3. Add the beaten eggs to the pan and mix constantly with a spatula, breaking and folding the mixture.
  4. When the eggs are nearly cooked, remove from heat and add the salmon and thyme, stirring gently.
  5. Let the mixture sit for about 45 seconds to finish cooking, then serve.
