Creamy Scrambled Eggs with Salmon Gravlax

Instructions
- Melt the ghee in a non-stick skillet over medium-low heat and cook the bell peppers and green onions until softened.
- In a mixing bowl, whisk the eggs with water, salt, and pepper until slightly frothy.
- Add the beaten eggs to the pan and mix constantly with a spatula, breaking and folding the mixture.
- When the eggs are nearly cooked, remove from heat and add the salmon and thyme, stirring gently.
- Let the mixture sit for about 45 seconds to finish cooking, then serve.
