Ingredients

The base

  • ½ pound king salmon
  • 8 pieces bagels
  • 1 to taste paprika or chili powder

The toppings

  • 1 slice tomato
  • 1 slice avocado
  • 8 pieces eggs

The sauce

  • 1 package hollandaise sauce

Instructions

  1. Preheat the oven to 400°F.
  2. Place the salmon in a baking dish and add enough water to cover it.
  3. Bake the salmon for 10 minutes or until opaque, then keep warm.
  4. Prepare the hollandaise sauce according to package directions.
  5. In a saucepan, bring water to a simmer and add vinegar.
  6. Crack the eggs into the water and cook for 3-5 minutes until the whites are firm.
  7. Remove the eggs with a slotted spoon and trim any ragged edges.
  8. Toast the bagels and layer with tomato, avocado, salmon, and eggs.
  9. Top with hollandaise sauce and sprinkle with paprika or chili powder before serving.
