Ingredients

The sandwich

  • 4 large eggs
  • 4 pieces bagels
  • 6 ounces smoked salmon
  • 1 Persian cucumber thinly sliced
  • ½ red onion thinly sliced
  • 1 tomato thinly sliced
  • 1 handful alfafa sprouts

The cream cheese spread

  • ¾ cup cream cheese
  • 1 tablespoon minced fresh Italian parsley
  • 2 teaspoons minced fresh dill

Instructions

  1. Mix cream cheese with Italian parsley and dill, and set aside.
  2. Scramble the eggs in a non-stick skillet until soft and fluffy.
  3. Toast the bagels if desired.
  4. Assemble the sandwiches by spreading cream cheese on the bagel halves, adding scrambled eggs, smoked salmon, cucumber, red onion, tomato, and sprouts.
