Instructions
- Take the chicken out of the fridge 20 minutes before cooking and rub with olive oil, salt, and pepper.
- Preheat the grill.
- Halve the tomatoes and olives, mince the garlic, and chiffonade the fresh herbs.
- Combine the tomatoes, olives, garlic, and herbs in a bowl with olive oil and let marinate.
- Once the grill is hot, oil the grate and cook the chicken for 4-6 minutes per side until cooked through.
- Remove the chicken and tent with foil for 10 minutes.
- Slice the chicken and serve topped with the tomato salad and feta cheese.
