Ingredients

The chicken

  • 2 pieces boneless skinless chicken breasts (6 oz each)
  • 1 tablespoon olive oil for the chicken
  • ¼ teaspoon salt
  • teaspoon pepper

The tomato salad

  • 8 oz cherry or grape tomatoes, halved
  • 6 whole pitted Kalamata olives, halved
  • ¼ cup extra virgin olive oil
  • 1 clove garlic, minced
  • ¼ cup fresh mint or basil leaves, sliced thinly
  • 1 oz feta cheese, cubed

Instructions

  1. Take the chicken out of the fridge 20 minutes before cooking and rub with olive oil, salt, and pepper.
  2. Preheat the grill.
  3. Halve the tomatoes and olives, mince the garlic, and chiffonade the fresh herbs.
  4. Combine the tomatoes, olives, garlic, and herbs in a bowl with olive oil and let marinate.
  5. Once the grill is hot, oil the grate and cook the chicken for 4-6 minutes per side until cooked through.
  6. Remove the chicken and tent with foil for 10 minutes.
  7. Slice the chicken and serve topped with the tomato salad and feta cheese.
