Grilled Greek Chicken Salad

Ingredients

The salad

  • 1 lb thin sliced chicken breasts
  • 2 heads romaine lettuce, chopped
  • ½ cup kalamata olives, chopped
  • 1 cup English cucumber, chopped
  • 2 count tomatoes, diced
  • 1 small red onion, diced
  • ½ cup pepperoncini
  • ½ cup feta cheese

The marinade

  • ½ cup olive oil
  • cup red wine vinegar
  • 1 count lemon, juiced
  • 3 cloves garlic, minced
  • 1 tsp dijon mustard
  • 1 tsp dried oregano
  • 1 tsp salt
  • ½ tsp pepper

Instructions

  1. Whisk together all marinade ingredients and pour half over the chicken breasts; let marinate for at least 1 hour.
  2. Chop all the salad vegetables and add the lettuce to a large bowl, topping with olives, cucumber, tomatoes, onion, and pepperoncini.
  3. Preheat the grill to medium-high heat and spray with nonstick spray. Grill the chicken for about 3 minutes per side until the internal temperature reaches 165°F.
  4. Let the chicken rest for 10 minutes before slicing and adding it to the top of the salad.
  5. Sprinkle feta cheese on top and drizzle with the remaining marinade. Enjoy!
