Ingredients

The tortilla bowls

  • 6 pieces burrito size flour tortillas
  • 6 pieces oven safe bowls
  • as needed spray cooking spray
  • as needed cups shredded cheddar cheese (optional)

The taco salad

  • as needed cups lettuce
  • as needed cups black beans (rinsed, drained, and heated)
  • as needed cups diced tomatoes
  • as needed cups chopped green onion
  • as needed cups chopped cilantro
  • as needed cups shredded cheese
  • as needed cups Creamy Avocado Dressing

Instructions

  1. Preheat the oven to 375°F.
  2. Coat the inside of the oven safe bowls with cooking spray.
  3. Gently press a tortilla inside each bowl.
  4. Place the bowls on two large baking sheets.
  5. Bake for 14-16 minutes until evenly browned.
  6. If using cheese, remove the bowls 2-3 minutes before they are done, sprinkle cheese inside, and return to the oven until melted.
  7. Let the tortilla bowls cool in the bowls for 5 minutes before transferring to a wire cooling rack.
  8. Fill the tortilla bowls with your favorite taco salad ingredients.
