Instructions
- Remove seeds from the watermelon if it's not seedless, then scoop the flesh into a blender.
- Blend the watermelon until smooth and strain the juice through a fine-mesh strainer.
- Fill each Champagne flute halfway with Champagne, then top with watermelon juice.
- Add simple syrup or St. Germain if desired for extra sweetness and serve immediately.
