Spanish Cauliflower Rice

Ingredients

  • 16 ounces cauliflower
  • 1 tablespoon olive oil
  • cup tomato sauce
  • ¼ cup chicken or vegetable broth
  • 1 teaspoon minced garlic
  • 1 teaspoon onion powder
  • ½ teaspoon ground cumin
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • 1 tablespoon fresh lime juice
  • ¼ cup cilantro, chopped

Instructions

  1. Cut the cauliflower into florets and process it in a food processor until it resembles rice.
  2. Heat olive oil in a large skillet over medium heat and add the cauliflower rice, cooking for about five minutes.
  3. Stir in the tomato sauce, broth, garlic, onion powder, cumin, sea salt, and black pepper. Cover and cook for an additional 5 to 10 minutes until tender.
  4. Uncover, toss with lime juice, and garnish with cilantro.
  5. Taste and adjust the seasonings as needed.
