Ingredients

The beef

  • 2-2.5 pounds beef, top round or bottom steak cut into ½-inch cubes

The seasoning and coating

  • to taste salt and pepper (or Cajun seasoning)
  • ½ cup flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 3 tablespoons cooking oil

The aromatics and herbs

  • 1 onion, roughly chopped
  • 2 teaspoons garlic, minced
  • 2 teaspoons thyme, minced
  • 1 teaspoon oregano
  • 1 bay leaf

The sauce

  • ½-1 cup tomatoes, pureed or diced
  • 1-2 teaspoons smoked paprika
  • 1 tablespoon Worcestershire sauce
  • 1-2 cups water
  • 1 small bell pepper, sliced (red or green)
  • 2 tablespoons parsley, chopped (garnish)

Instructions

  1. Pat dry the steak and season with salt, pepper, and Cajun seasoning.
  2. Combine flour, salt, pepper, garlic, and onion powder in a bowl.
  3. Coat the steak with the seasoned flour and shake off excess.
  4. Heat oil in a skillet over medium-high heat and sear the steak until golden brown, about 6-7 minutes per side.
  5. Remove the beef and set aside on a plate.
  6. In the same skillet, sauté onions for 2-3 minutes, then add garlic, thyme, oregano, and bay leaf, cooking for 3-5 more minutes.
  7. Add tomato puree, smoked paprika, Worcestershire sauce, beef, and 1-2 cups of water. Cover and simmer for about 45 minutes.
  8. Add bell pepper and continue cooking until the meat is tender.
  9. Serve warm, spooning the sauce over the steak.
