Ingredients

The steak and filling

  • pounds flank steak
  • 1 pound swiss chard
  • 4 ounces feta cheese
  • 2 tablespoons raisins
  • 2 ounces walnuts

The aromatics and seasoning

  • 3 tablespoons oil of choice
  • 4 ounces onion
  • 3 cloves garlic
  • 1 tablespoon lemon juice
  • 1 unit lemon zest
  • to taste unit salt and pepper

Instructions

  1. Preheat the oven to 350°F and toast the walnuts until browned.
  2. Wash, stem, and chop the Swiss chard, then set aside.
  3. Sauté onions and garlic in oil until softened, then add Swiss chard until wilted.
  4. Mix in lemon zest, juice, salt, and pepper, then let cool.
  5. Butterfly the flank steak and rub with oil, salt, and pepper.
  6. Combine Swiss chard mixture with feta, walnuts, and raisins.
  7. Spread the filling on the flank steak, roll it up, and tie with kitchen twine.
  8. Grill or bake the stuffed steak until cooked through, then let rest before slicing.
