Quick Swiss Chard

Ingredients

The chard

  • 1 large bunch Swiss chard

The seasoning

  • 1 ½ tablespoons extra-virgin olive oil
  • teaspoon fine salt
  • 2 medium cloves garlic
  • a pinch red pepper flakes (optional)
  • ½ teaspoon lemon juice

Instructions

  1. Prepare the chard by cutting off the browned bits at the ends of the stems and discarding them.
  2. Remove the thick center ribs and slice them into ¼-inch thick pieces, keeping them separate from the leaves.
  3. Stack the greens, roll them up, and slice them thinly to create long strands.
  4. Heat a large skillet over medium-high heat and add the olive oil.
  5. Once the oil is shimmering, add the ribs and salt, cooking until they are easily pierced by a fork.
  6. Add the greens to the pan and cook, stirring every 30 seconds until they are wilted and starting to brown on the edges.
  7. Add the garlic and red pepper flakes, cooking until fragrant.
  8. Stir in the lemon juice, adjust salt if needed, and serve with lemon wedges.
