Mediterranean Swiss Chard Salad

Ingredients

The salad

  • 4–6 cups shredded young chard
  • 1 unit red pepper
  • 4 unit radishes
  • 1 cup English cucumber
  • 6 unit cherry tomatoes
  • 1 unit avocado
  • ¼ cup red onion
  • ¼ cup kalamata olives
  • 1 cup cooked chickpeas
  • 1 cup chopped Italian parsley
  • ¼ cup toasted pepitas
  • optional unit sprouts
  • optional unit crumbled goat cheese or feta

Lemony Dressing

  • 2–3 tablespoons fresh lemon juice
  • 1 teaspoon finely grated lemon zest
  • 1–2 unit finely grated garlic cloves
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • ¼ cup extra-virgin olive oil
  • to taste unit Kosher salt and freshly ground pepper

Instructions

  1. Wash and chop or tear the swiss chard leaves and finely cut the stems.
  2. Combine all salad ingredients in a large bowl.
  3. In a small bowl, whisk together the lemon dressing ingredients.
  4. Dress the salad and toss, adjusting the dressing as needed.
  5. Season with salt and pepper to taste, and add nuts or seeds and optional cheese.
