Swiss Chard Salad with Parmesan & Bread Crumbs

Ingredients

The salad

  • 1 bunch Swiss chard
  • cups fresh bread crumbs
  • 1 clove garlic
  • sea salt to taste sea salt
  • crushed red pepper flakes optional crushed red pepper flakes
  • 1 whole lemon
  • ¾ cups grated Parmesan

The dressing

  • ½ cup extra virgin olive oil

Instructions

  1. Wash and dry the chard, remove the stems, and shred the leaves into ribbons.
  2. Warm ¼ cup of olive oil in a skillet, add the bread crumbs, and cook until golden brown.
  3. Stir in garlic, salt, and pepper flakes, then remove from heat.
  4. Zest the lemon into the chard bowl, juice the lemon, and whisk in the remaining olive oil and salt.
  5. Add Parmesan and toss with the chard and dressing, then mix in the toasted bread crumbs.
