Ingredients

The Steak

  • 1 pound flank steak
  • ½ cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon balsamic vinegar
  • ½ lemon juiced
  • 4 cloves garlic
  • cup basil
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • 1 tablespoon pepper

The Salad, Bread, and Eggs

  • 6-8 cups spring greens
  • 1 pint grape tomatoes
  • cup kalamata olives
  • ¼ cup oil packed sun-dried tomatoes
  • 1 whole avocado
  • ½ small red onion
  • 4 ounces feta cheese
  • ¼ cup fresh basil
  • 1 loaf whole grain french bread
  • 2-4 tablespoons olive oil
  • 1 clove garlic
  • 6 eggs soft or hard boiled

The Dressing

  • ½ cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 lemon juiced
  • 1 teaspoon dijon mustard
  • 1-2 teaspoons granulated sugar
  • 1 clove garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried dill
  • to taste salt and pepper

Instructions

  1. Marinate the flank steak in a mixture of olive oil, red wine vinegar, balsamic vinegar, lemon juice, garlic, basil, oregano, salt, and pepper for 4-24 hours.
  2. Grill the marinated steak for about 5-6 minutes on one side, then flip and grill for another 4-5 minutes or until desired doneness.
  3. Let the steak rest for 10 minutes before slicing it thinly on an angle.
  4. Preheat the oven to 375°F and prepare the French bread by rubbing it with olive oil and garlic, then sprinkle with salt and basil before toasting in the oven for 10-15 minutes.
  5. In a large bowl, combine spring greens, grape tomatoes, kalamata olives, sun-dried tomatoes, avocado, red onion, and basil, then toss with the dressing and sprinkle with feta.
  6. To make the dressing, whisk together olive oil, red wine vinegar, lemon juice, dijon mustard, sugar, garlic, oregano, basil, dill, salt, and pepper.
  7. Assemble the dish by spreading the salad over the toasted French bread, adding the sliced steak and soft boiled eggs, then sprinkle with feta and fresh pepper.
