Mediterranean Steak Bowl

Ingredients

The Bowl

  • 1 lb. flank steak
  • 10 oz. grape or cherry tomatoes
  • ½ medium red onion
  • 1 head romaine lettuce
  • 1 large cucumber
  • cup pitted kalamata olives
  • 1 cup garlic hummus
  • ½ cup crumbled feta cheese
  • 2 tsp. oil of choice
  • 1 lemon lemon wedges for garnish
  • to taste salt & pepper

Herbed-Yogurt Dressing

  • 1 cup plain yogurt
  • 1 Tbsp. olive oil or avocado oil
  • ½ lemon juice of lemon
  • 1 large clove garlic
  • ½ tsp. dried oregano
  • ½ tsp. dried dill
  • ½ tsp. salt
  • 2 tsp. chopped fresh mint

Instructions

  1. Make the Herbed-Yogurt Dressing by whisking all dressing ingredients together and refrigerate.
  2. Preheat the grill to high heat.
  3. Pat the steak dry and season both sides with salt and pepper.
  4. Thread cherry tomatoes and onions onto skewers, brush with oil, and season with salt and pepper.
  5. Grill the veggies for 5-8 minutes until charred and the steak for 4-5 minutes on each side for medium-rare.
  6. Let the steak rest for 10 minutes before slicing thinly against the grain.
  7. Assemble the bowls with romaine, sliced steak, grilled veggies, hummus, cucumbers, olives, and feta cheese.
  8. Drizzle with the Herbed-Yogurt Dressing and garnish with lemon wedges and mint.
