Ingredients

The pasta

  • 1 box bean based spaghetti (Explore Cuisine Organic Edamame spaghetti)

The salad

  • 1 cup chopped avocado
  • 1 cup fresh or defrosted frozen corn
  • 1 cup chopped fresh tomato
  • ½ cup chopped red onion
  • ½ cup chopped cilantro
  • ¼ cup fresh lime juice
  • 1 teaspoon sea salt
  • ¼ teaspoon garlic powder
  • ⅛-¼ teaspoon chipotle powder
  • 1 tablespoon avocado or olive oil (optional for flavor)
  • 1-3 teaspoons chopped fresh jalapeño (optional for added spice)

Instructions

  1. Cook the noodles according to package directions.
  2. Chop all the veggies and prep ingredients while waiting for the water to boil.
  3. Once the noodles are cooked, run them under cold water and drain well.
  4. Add the noodles to a large bowl, then mix in all of the ingredients and toss to combine.
