Cilantro Lime Dressing

Ingredients

  • ½ cup extra-virgin olive oil
  • ½ cup lime juice
  • 1 cup loosely packed cilantro
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • ½ teaspoon ground cumin
  • scant ½ teaspoon fine salt
  • 1 clove garlic
  • 1 small jalapeño (optional)
  • pinch none red pepper flakes (optional)
  • 2 tablespoons tahini (optional)
  • ½ cup whole-milk Greek yogurt (optional)

Instructions

  1. Combine all ingredients in a food processor or small blender.
  2. Process until smooth with tiny flecks of cilantro.
  3. Taste and adjust sweetness or saltiness as needed.
  4. Serve immediately or store in a covered jar in the refrigerator for up to one week.
