Ingredients

The pork

  • 4 pounds pork butt or Boston butt
  • 1 small onion, quartered
  • 4 cloves garlic, smashed
  • 1-2 tablespoons olive oil
  • to taste salt
  • to taste pepper

The dry rub

  • 1 tablespoon low carb brown sugar
  • 1 tablespoon Montreal Steak Seasoning
  • 1 ½ teaspoons smoked paprika
  • ¾ teaspoon ground cumin

The soak

  • cup water
  • cup apple cider vinegar
  • cup low carb brown sugar

Instructions

  1. Mix the ingredients for the 'Apple Cider' Soak and warm it.
  2. Pour the soak into the crock pot and set it to HIGH.
  3. Remove the fat cap from the pork and rub it with oil, salt, pepper, and the dry rub.
  4. Place the pork in the crock pot and nestle the onion and garlic around it.
  5. Cook on HIGH for 6 hours or LOW for 8-10 hours until tender.
  6. Remove the pork, cool for 20 minutes, then shred it and discard any fat.
  7. Save the cooking liquid for other uses.
