Ingredients

The pork

  • 4 pounds pork butt or Boston butt
  • 1 small onion, quartered
  • 4 cloves garlic, smashed
  • 1-2 tablespoons olive oil
  • to taste salt and pepper

The dry rub

  • 1 tablespoon low carb brown sugar
  • 1 tablespoon Montreal Steak Seasoning
  • 1 ½ teaspoons smoked paprika
  • ¾ teaspoon ground cumin

The soak

  • cup water
  • cup apple cider vinegar
  • cup low carb brown sugar

Instructions

  1. Mix the ingredients for the 'Apple Cider' Soak and warm it up.
  2. Pour the soak into the crock pot and turn it to HIGH.
  3. Remove the fat cap from the pork and rub it with oil, salt, and pepper.
  4. Apply the dry rub to the pork and place it in the crock pot.
  5. Nestle the onion and garlic around the pork in the crock pot.
  6. Cook on HIGH for 6 hours or LOW for 8-10 hours until tender.
  7. Remove the pork, cool for 20 minutes, and shred it.
  8. Discard any fat or connective tissue and save the cooking liquid.
