Smoked Almond and Goat Cheese Salad

The salad

fresh baby spinach and/or spring mix

fresh parsley

crushed smoked almonds

crumbled goat cheese
The dressing

shallot, minced

tbs.
honey

tbs.
red wine vinegar

tsp.
dijon mustard

tbs.
olive oil

tsp.
fresh rosemary

salt and pepper to taste
Instructions
- Sauté the minced shallot with 1 tablespoon of olive oil and honey, seasoning with salt and pepper.
- Transfer the mixture to a bowl and whisk in the red wine vinegar, dijon mustard, and rosemary. Add the remaining olive oil and whisk again.
- In a large bowl, combine the spinach or spring mix with parsley, then add the dressing and toss to coat.
- Plate the dressed spinach mixture and top with crushed smoked almonds and crumbled goat cheese.
